Quesadillas are burger alternatives with a Spanish flair. There are the Salvadorena and there are the Mexicana types.
This vegetarian tortilla recipe that you may be looking for. It can be the flour type or the corn type. It don't matter.
This starts with a soft stack of warm flour tortillas. I buy my tortillas from a local Spanish American grocer. They are wrapped in a soft cheese cloth and placed in some sort of a container that keep them nice and warm.
So yeah, I don't have to warm them up to soften them. They're all ready to go.
But if you buy your tortillas frozen or refrigerated, you can always soften them on a Nonstick Fry Pan or GriddleSet the warm tortillas aside (keep them warm with a cover) and stir fry the quesadilla filling.
In a Nonstick Fry Pan,Add the red and green peppers and the mushrooms and continue stirring. Do this until the veggies are crisp tender. Season with worcestershire sauce, salt and pepper to taste.
Lay each of the corn tortillas in a heated Non-Stick Frying Pan or griddleAdd the grated cheese of your choice and top each with another tortilla. Grill fry for a couple of minutes and flip with a spatula. It's okay to be sloppy.
The cheeses should be melting peeking though the pair of grilled tortillas.
Cut them in half or in quarters.
