A taco of course is a traditional Mexican food composed of corn or wheat tortilla folded with some filling in it.
The tortilla can be crispy or soft. It's generally formed by simply folding a tortilla in half around a filling, leaving the semicircular perimeter open. It can be made with a lot of different fillings so it's really fun to make.
Tacos are generally eaten without utensils so it's a finger food. It's accompanied by garnishes such as guacamole, salsa, avocado, meat, cilantro, tomatoes, onions and lettuce. But we'll skip the meat here and make this veggie.
A burrito is also a Mexican type of food which consists of flour or wheat tortilla wrapped or folded into a cylindrical shape to completely enclose a filling of meat or vegetable mixture.
The flour tortilla is usually lightly grilled or steamed, to soften it and make it more pliable to wrap around enclosing a filling.
There's only a few whole food ingredients in this healthy taco recipe compared to the ones at the Taco stand.
- Soft Corn Tortillas
- Kidney beans
- Chopped baby potabella mushrooms
- Chopped sweet Spanish onions
- Minced garlic
- Chilli powder
- Salt & pepper to taste
For the Salsa
- Sliced avocado
- Diced Tomatoes
- Juice of one lemon
- Salt, pepper to taste
- Parsley or Cilantro
- Chopped Red Onion
Mix the Salsa ingredients together. Set aside
Heat the soft tortilla until soft and pliable. Transfer in a Taco holder if you have one. If not, just lay it flat on the dish so you can put some filling in it and fold.
Saute the garlic, onions, mushrooms in a bit of oil. Add in the kidney beans. Season with salt, pepper & chilli powder. Saute until everything is cooked. Eyeball it. That's your filling.
Fill the Tortilla wraps. Add some salsa on top and fold over the filling. Top with avocado slices. Like it hot? Sprinkle some hot sauce on it for heat. Lots of salsa is perfectly fine.
