Here's a favorite Filipino glass noodle recipe.
- Glass Noodles - you'll find them in the Asian markets
- Mushrooms - prefferably Oyster mushrooms
- Garlic - make it extra garlicky
- Onion - the yellow cooking onion
- Ginger - about an inch mashed or diced
- Bok-Choy - you can also use any greens you like
- Soy Sauce - to taste
- Ground Pepper to taste
Soak the glass noodles in a big bowl of very hot water making sure the water covers all the noodles.
Our favorite to soak the noodles in is a really big Stainless Steel Mixing Bowl
to accommodate all of them.
Leave it soaked for about 7 to 10 minutes while you prepare all the other ingredients.
In a pot with cover put a little bit of oil. I like to use a stockpot like this one: Stainless Steel Stockpot with Cover
because it's just perfect for making soups.
Stir fry the garlic, onion and ginger until wilted. Add in the mushrooms and stir. Add some water and about 5 cups or more depending on how soupy you want it to be. It also depends on how much noodles you will be using. Remember that the noodles will absorb all the liquid. So add some water to the pot as necessary.
Bring the liquid to a boil. Meanwhile, drain the glass noodles that you're soaking. When the liquid starts to a rolling boil, add the noodles to the pan. The noodles should cook fast as they were pre-soaked in hot water.
Don't forget the greens! Add them last because they cook really fast. Season with natural Tamari soy sauce and ground pepper to taste.
This vegetarian soup recipe is perfect for a cold day or rainy day even. This is a vegetarian diet recipe that I can go for everyday, if you are Asian anyway. Even in the summer, there's nothing like a vegetarian soup like Pho soup to nourish the body.
Glass noodle soup is a favorite in my Asian food list. You can order them anywhere you go in a big city where there are exotic Asian markets. But there's nothing like a home made vegetarian food recipe like this that I love making.
I get to make it vegetarian without losing all the authentic taste. A huge bowl of this stuff seems to make my dreary winter day a little brighter.
