Whole Food Vegan Pasta Sauce 

There's no canned tomatoes used in this vegan pasta sauce. Uh-uh. This is made with real tomatoes and spices. Oh yes, eggplant too!

Ever heard of pasta sauce with eggplant? No? Well, you do now. This vegan pasta sauce is made with real whole foods ingredients. This is as fresh as can be with real whole Roma tomatoes.

Yes, you don't need to stock up on those canned tomatoes just because they're on sale.

Those things have possible BPA contamination in them. Leave them on the supermarket shelves and go for real whole tomatoes.

A pot full of fresh vegan tomato sauce is what you need when you are eating whole foods and you want that pasta craving satisfied.

This red tomato sauce is easy, delicious and it's full of flavor.

Fresh plum tomatoes from the garden.
  • fresh whole tomatoes of course (use either store bought or the bounty from your summer garden)
  • whole spices like oregano, parsley, rosemary and thyme (just eyeball the quantity)
  • salt and pepper to taste
  • 2 whole onions cut (set aside one of them for simmering)
  • 1 knob of garlic diced or pounded (divide in half and put other half aside)
  • 1 eggplant (cubed, save for later don't put these in the blender) 
  • A few bay leaves ( don't add these in the blender)
Put all the ingredients except the cubed eggplant in your favorite High Speed Blender. Blend until all the tomatoes and the spices are liquefied.

To help the blender get started, use the pusher to push the tomato chunks in the blade first to liquefy everything.

Using the blender is the easiest and fastest way to make a tomato sauce from real whole fruit. Usually 6 to 10 Roma tomatoes yield a large pot.

Best thing is you can freeze the extra sauce for later use.

Once liquefied, you can even use this for your raw vegan pasta like the spiralized zucchini noodles. But don't stop there because we are still going to simmer this vegan pasta sauce to perfection!

Use a large pot like the 6 quart Farberware Classic Cookware Covered Chef Pan in Stainless Steel because the yield on this sauce is enormous enough for a big family.

In the pot put a bit of oil, add the garlic and sliced onion. Stir for a bit then pour in the sauce from the blender. Add some bay leaves, salt, pepper and spices. Put the cubed eggplant in the pot as well.

Simmer until the eggplant is cooked which makes the sauce thickened. Taste and season to your liking.

Serve with your favorite pasta.
