Raw Food Dessert - Indulgence without the guilt.

Life is too short to skip or skimp on dessert. Conclude a meal with a sweet mega slice of this sweet course, then have another one and repeat.

This raw food dessert is an indulgence and you will never feel an ounce of guilt. This stuff is so decadent you may want to eat 3 mega slices. It's a promise that everything will be just fine! Honest. 

You may call this: Banana Cream pie. It's made with other fruits so it's a Fruit Cream Pie! However you wanna call it, it's awesomely delicious!

So you don't need to turn that oven knob to bake a delicious decadent dessert. Let your freezer do all the baking!

There's absolutely no baking involved in this sinful cake. Baking will be a thing of the past when you learn how to make this gorgeous sweet and awesome raw food.

This stuff is so creamy but you will never know there's absolutely no cream in it. It's naturally sweet with no added sugar.

You will not believe that this is not an ice cream cake! Infact, it's better than ice cream.

You don't need any of those animal byproducts to make this creamy and decadent.

This stuff is also flourless, sugarless and chocolatey without the artificial additives.

This is the real fruit cake! There very few ingredients involved to make this amazing raw food dessert.

The process is fool-proof. You have got to try this! Get the kids involved. They can eat a whole lot of this with no restriction whatsoever. They can even lick the frosting. No rules here.

So, let's get started, shall we? Here's the recipe:

For the Crust:

  • 1 cup cashew (roasted is preferable for the crunch)
  • 6-7 Dates
  • 3 tablespoon peanut butter (optional)
  • 1 tablespoon raw honey or Agave nectar or natural syrup to add sweetness but Dates are already sweet.
  • 1 tsp cinnamon
  • a pinch of sea salt

For the Filling:

  • 2 Mangoes
  • 5 Bananas
  • 1 cup Strawberries
  • (or you can use any fruit you like but don't skip the bananas for creaminess.)

For the Frosting:

  • About 10 Dates
  • 2 tablespoon Raw Cacao Powder or good quality cocoa powder
  • 1 tsp Vanilla Extract
  • 1 tsp Cinnamon
  • Raw honey or agave nectar to taste 
  • a pinch of salt

The crust:

Grind the nuts and dates coursely in a food processor. Add the honey or any preferred sweetener and peanut butter. Add the cinnamon, salt and vanilla. Mix well until it forms into a ball of sticky nut and date mixture. Spread the mixture into the bottom of a spring form pan. 

Note: Roasted cashews won't qualify totally as raw food dessert. But, why not use it? It's preferable for the crunch factor for the crust. 

The filling:

Blend the bananas in a high speed blender. Pour half of it into the crust. Add the mango flesh to the other half of pureed banana in the blender. Blend and pour it into the crust. Add the strawberries into the blender, add a couple of bananas into it and blend until smooth. Pour the mixture into the crust. So now you have different types of fruits. 

The idea is to have every fruit blended with a banana to achieve the creaminess without the added dairy. By blending all bananas first, you get the white layer. 

Once all the layers are in, put the spring form pan in the freezer until the fruit cream hardens and ready to slice. Overnight in the freezer is best for this raw food dessert.

The frosting:

Blend the dates, cinnamon, honey, raw cacao powder & a pinch of salt until thick, creamy and spreadable. Put in a container and refrigerate. You can lick the spoon when no one is looking and it's perfectly alright.

When the fruit cream is set, put the date chocolate frosting on top of the fruit cream. Spread it evenly and sprinkle with coconut flakes if you like. Top with sliced strawberries. This mixture can be used in all the fruit dessert recipes as topping or frosting.
