Can't stop making this mango ice cream recipe. Imagine having a giant scoop of mango ice cream everyday and never feel an ounce of guilt. Go for it. Have seconds.
You know, if you haven't read food labels, you should start right now. Don't be left in the dark. Be aware of the ingredients on those commercially made ice cream. They're all listed at the back of their pretty packaging and they are just terrifying.

Let's make our ingredients simple:
- 4-6 ripe Mangoes!
- 1 cup fresh Coconut Milk (you can also use any nut milk)
- Raw Honey to taste
- Pure Vanilla extract
- a dash of cinnamon
Put the freezer bowl of the ice cream maker in the refrigerator's freezer and leave it there for a few hours until it's completely frozen. It's even best to leave it there overnight. That's what the instruction manual say.
You can use different types of mangoes if you want. Our favorite is Ataulfo mangoes. Peel the mangoes or just cut them in half leaving the seeds out and scoop out the flesh into a bowl or put it directly into a high speed blender.
Note: We use fresh coconut milk here. Those that are in the cans have preservatives added to them plus possible BPA contamination and you don't want that in your mango ice cream recipe. Why not just learn to make your own coconut milk?
Add the coconut milk to the mango flesh in the blender. Add a teaspoon of pure vanilla extract and a dash of cinnamon. Add some raw honey to sweeten and run the blender on high until the mango mixture is smooth.
Take the frozen ice cream maker freezer bowl and pour the blended ice cream ingredients from the blender into it.
Turn the ice cream maker on and run it until the mix is thickened. The fat in this ice cream is what makes it thick and creamy. So coconut is the best candidate for this recipe.
Scoop into a pretty glass or an ice cream cone and enjoy!
It definitely tastes clean and creamy without the cream. It's devoured in just a few minutes. We can eat this everyday and have no regrets. It's all mango flavor in every scoop. Try some, you won't regret it, ever!
Regrets? No. The only regret you'll ever have is not having enough when you don't make enough.
