How to cook Zucchini -it's a veggie with a versatile attitude.

Learn how to cook zucchini in many ways. This summer squash is flexible. You can fry them, saute them or you can even eat them raw. You make the rules!

You must know how to cook zucchini if you are a gardener and  your garden is abundantly brimming with this vegetable.  You can make a zucchini meal everyday in many different ways. There's a lot you can do with this vegetable.

I don't know about you, but in the summer, we have zucchinis coming out of our ears!  They're reproducing at a rate that my family can't eat them all. So I learned a lot about cooking summer squash in a whole lot of ways.

This vegetable is also known as 'gaggots'. 

Below is one of my favorite summer dish. Are you hungry? Let's make it already!

How to cook zucchini with pasta.

Make the veggie chips:

  • 2 large zucchinis
  • Coconut Oil for frying
  • Salt and Pepper to season them
  • Panko Breadcrumbs or the Italian style crumbs (whichever you prefer)

Make the Pasta

  • 1 bulb of garlic chopped
  • a tiny bit of oil
  • 1 box linguini cooked according to package directions
  • Salt to taste
  • Grated Parmesan cheese or vegan cheese. You can also use chopped nuts instead of cheese.
  • Slice the squash about half an inch crosswise. 
  • Season with salt and pepper
  • Dip in organic eggs if you wish. If vegan use almond milk, soymilk or any nutmilk of your choice.
  • Coat with panko breadcrumbs 
  • Fry in hot coconut oil until golden brown

Enjoy them this way:

  • Dip these fried zuke in a homemade ketchup and dig in.
  • Or, proceed and assemble it with the pasta.

Assembling zukes with the pasta:

  • Boil the pasta according to package direction.
  • Retain the liquid with the pasta and set aside. 
  • Fry the chopped garlic in a bit of coconut oil until slightly brown.
  • Remove from heat and pour it into the pasta scraping all the garlic bits.
  • Stir.
  • Put some pasta in a dish and add the fried zucchini chips
  • Sprinkle with cheese (vegan or regular).
  • Enjoy with some garlicky bread

So you can stuff it, bake it, roast it, saute it and so on. Make a zucchini bread out of it. Eat it raw or you can make zucchini pancakes with it and so much more! Anyway you make it, it always comes out good.  

A perfect summer dish: Zucchini and pasta with lots of garlic. Mix in some fresh basil and dinner is served!

Or... you can forget about learning how to cook zucchini. Just uncook them and eat them raw. Here's a simple raw food recipe for you: Raw pasta with pesto sauce. That's just another way to enjoy the abundance of this summer squash.

Zucchinis are very versatile summer squash. When it calls for a breaded fried zucchini chips, I like it harvested with the seeds slightly forming inside. Tender zucchini seeds make a little crunchy texture when you bite.

After all, you like them crispy fried. The sweet young seeds inside adds to the crunch.

If eating these veggies raw, it's best to choose the squash when they're very tender before the seeds develop. You cut them lengthwise and dip them in hummus or any dipping of your choice.

Raw tender zucchinis make excellent delicious raw food snack or even lunch!
