Feast with your eyes first, then chow down on Spring asparagus all dipped pretty in a  bowl of creamy healthy vegetable dip.

Asparagus are crunchy, very mild-tasting and loaded with anti-oxidants known to neutralize cell-damaging free radicals.

According to preliminary research, asparagus are delicious vegetable known to slow down the process of aging in humans.

So that's good news right? So that's a good reason to eat more of this crunchy delicious Spring veggie.

Even without those proven studies and researches, there are lots of reasons why we should eat more asparagus. We know they're packed with nutrition but one best reason is that 'they're delicious' either cooked or uncooked! 

These veggies are perfect for grilling, sauteing and also great in salads. They're even good as is, raw and crunchy. It's a great meal to eat when you're starting a raw food diet

Asparagus Officinalis are just like little bamboo shoots. They're classified as in  the lily family. They're actually flowering perennials like onions and garlic. Plant these in the Spring as they come up year after year. 

These tasty shoots are also one the vegetables with less pesticides in them so that's good news. They contain less to no chemicals as they sprout out of the ground year after year with very minimal tending.

Asparagus are Spring vegetables that are harvested before they mature into fern-like leaves. They're edible when they're just shoots. So you gotta pick them when they're tender and young shoots. Grab a bunch and munch on them. 

This is gotta be one of the perfect snack in the book that you can make in a pretty presentation.

Avocado dip recipe. Dip anything you want in it.

For the Dip:

  • 1 ripe avocado
  • 1 bunch of asparagus
  • juice of one lemon or lime
  • 1 small clove garlic
  • 1 pinch of salt
  • a few sprigs of dill

Break the asparagus separating the tougher stems for blending and the tender tops for dipping.

Then put the tougher stems with all the ingredients together in a blender and blend them until creamy. Resist putting additional water. The juice of one lemon is enough to get a really creamy texture.

Transfer in a small bowl and dip the asparagus tips in it. Refrigerate for about 30 minutes until the avocado/asparagus cream firms up a bit for a pretty presentation.

Let your eyes feast on it first, then get dippin'.
