My go to garden salad is either fruity and creamy smothered with all types of fun dressings.  How about you?

Have a big bowl of it. You know you need your roughage.

Organic Red Lettuce
  • 1/2 cup of raspberries
  • 3 tablespoons white wine vinegar or (ACV) apple cider vinegar 
  • 1 tablespoon Olive Oil
  • a package of spring mixed salad greens or from your garden
  • Mandarin Oranges
  • 1/2 cup crumbled blue cheese or Feta Cheese
  • 1/4 pecans or any type of nuts you prefer

In a high speed blender, process the cranberries or raspberries with the white wine vinegar or ACV with the Olive Oil. Set aside in a small bowl, cover and refrigerate.

In a large bowl, combine the salad mix, mandarin oranges and blue cheese or feta (whichever you like best). 

Pour the dressing over the salad mixture. Toss to coat every single leaf. Add the nuts of your choice, toss again and serve immediately.

It's the best green salad ever. No need for nutritional analysis. Anyway you toss it, it's a perfect light but filling meal any time.

The taste is light and it's like a perfect Spring lunch paired with focaccia bread or flat bread. Wash it down with any healthy beverages you choose and call it lunch or dinner.
