Fruit Pie RecipeChocolate Banana Cream Pie

For the Crust:

  • 1 - 2 cups Roasted Cashews for the crunch factor (you may use raw cashews if you want it all raw)
  • about a dozen pitted Dates
  • 3 tablespoon Raw honey (you may use Agave Nectar or Stevia)
  • 1 teaspoon Cinnamon
  • a pinch of sea salt

Note: You can omit the sweeteners and just use more dates.

For the Filling:

  • Frozen Bananas 
  • Frozen Cherries
  • 1 teaspoon Vanilla Extract
  • Optional (raw cashews soaked for about 5 hours or overnight)

Homemade Vegan Chocolate Syrup is very useful in raw food recipes. Make a big jar of it and you can healthfully drink it.

The crust:

Grind the cashews coarsely in a food processor. Add in the Dates, cinnamon, salt, vanilla & sweeteners if preferred. Process until everything is mixed in forms into a ball. Then spread into a round baking dish or bottom of a spring form pan to form the crust.

The Filling:

Put the bananas in a high speed blender. Add the vanilla extract. Add in the soaked raw cashews. Give it it a whirl using the blender's tamper to push the bananas into the blades. Blend until creamy.

Pour 3/4 of the banana mixture into the crust. Then put pitted cherries into the remaining banana mixture. Give it a whirl again until you get a smooth mix. Then pour the banana cherries mixture on top of the first banana mixture.

Decorate with a cherry and freeze bake until set, about 5 hours. Take it out of the freezer and let it stand for about 20 minutes before slicing.

Making the crust can be done in a food processor or blender. 

Don't worry about left-over. They taste like the insides of Reeses peanut butter cups!

Just clear your freezer and make room for this. Make it a big batch. You will be eating it like fudge without all the guilt.
