Try this Filipino Pancit Bihon recipe guisado style with lots of vegetable action going on.

And no, we don't do that chicken wing madness in this pancit bihon recipe. There are no bugs of the sea in this either. Yup, just none of that stuff. It's simply vegan!

Vegetarian Pancit Bihon Recipe Simplified

Rice Stick NoodlesFilipino Rice Stick Noodles
  • 1 pack Filipino Rice Sticks or Bihon
  • Shiitake Mushrooms or any mushrooms available
  • Soy Sauce to taste
  • Salt & Pepper to taste
  • 2 tablespoons of organic coconut oil
  • Garlic cloves (as much as you want - we want ours super garlicky)
  • 1 cup Water or Vegetable Broth
  • 1 Chopped Onion
  • small piece minced or grated ginger
  • Choice of green veggies such as Pechay or Bokchoy, cabbage (shredded) or even Kale - about 2 cups
  • Carrot strips from 1 medium size carrots
  • Lemosito or Kalamansi or American lemon

Soak the rice noodles or rice sticks in hot water just to fully cover it until the noodles are soft. Drain and set aside.

In a wok, saute the garlic, ginger and onion in coconut oil until they're just about soft. Just don't burn them.

Add the mushrooms and stir for about three minutes then add the green veggies and stir again. 

Pour in the vegetable stock or plain good ole filtered water and bring to a boil. Add the salt and pepper seasonings. Splash a bit of soy sauce to taste making sure the dish is not too salty to your liking.

When the veggies are all tender crisp, add the drained soaked rice stick noodles and stir to incorporate everything nicely.

Add more water if necessary and stir.

Enjoy your vegetarian Filipino pancit bihon simplified without any greasy animal ingredients.

It's clean and tasty. It is vegan.

After eating clean pancit bihon guisado like this often without the meat, I won't go back to that greasy pancit bihon again cooked with animal pieces specially when they taste all gamey with all the bird meat.

The mushrooms is absolutely prefect for this Filipino vegetarian dish.
