The Filipino Leche Flan Recipe with that velvety melt-in-your-mouth goodness nestled in caramelized sweetness.

  • 1/2 cup turbinado brown sugar, sugar cane sugar or anything natural
  • 1/4 cup filtered water
  • 8 organic cage-free egg yolks (this is for ovo-lacto vegetarians or lacto-ovo veggies that includes eggs and milk in their diets
  • 1/4 cup natural raw sugar (if possible)
  • 2 cups organic milk (you can use any nut milk if desired)
  • 1 teaspoon vanilla extract

In a medium size saucepan, dissolve the turbinado or any natural brown sugar in water. Cook over medium heat without stirring until it has thickened into a syrup. Remove from heat and prepare the mold pan, a round or square pan will do.

In the mold pan, pour the caramelized sugar which is now a syrup to coat it and set aside.

Take a large mixing bowl using a hand mixer or food processor, beat the cage-free egg yolks until lemon colored and fluffy. Gradually add the sugar, milk and vanilla into the beaten egg yolks. Beat until well-blended. Pour into the mold pan.

Place mold pan over another large pan half-filled with water. Bake in the oven at 325 degrees Farenheit for about an hour.

Remove from oven and let it cool. When cooled, remove from mold by turning it upside down into a pretty dish like an upside-down cake.

Put a cherry on top. Slice as you serve.
