This is the best vegetarian chili that uses 4 types of beans. I have this recipe stashed away for years. It's a great chunky vegetarian chili every time!
This amazing vegetarian chili is not just for bean lovers. Beans are truly good for the heart. You get all the fiber in every spoon to keep you regular. Concerned about protein? This is your answer.
- 1 chopped medium onion, chopped
- 2 diced red & greed bell pepper
- 1 can of black beans
- 1 can of red kidney beans
- 1 can northern beans
- 1 can white kidney beans
- 4-6 fire roasted tomatoes or you can use canned ones
- 2 cups vegetable broth - no buillion cubes for me due to MSG content
- 2 tablespoons chili powder or more
- 2 teaspoons garlic powder
- 1.5 teaspoons ground cinnamon
- 1 teaspoon sea salt (or to taste)
- cracked pepper to your liking
Sauté the chopped onion in a little bit of olive oil in a heavy pot.
Chop the peppers while the onions are cooking or have all the veggies chopped before you even start cooking.
Add the peppers and stir until wilted (if frozen) and browned.
Rinse well and drain all the beans and add them to the pot.
Although fresh tomatoes are recommended you can always canned tomatoes and add 2 cans of it – Fire roasted tomatoes with something or sort of chili for heat is best.
Add all the spices, salt, and vegetable broth and stir well.
Turn up the heat to medium and let it simmer. At this point the chili is pretty much ready to eat, although the longer you let it simmer for a chunky vegetarian chili. Let it simmer for about an hour.
Do you want to use a crock pot for this? Well you go right ahead. Let this healthy vegetarian chili cook all day long.
Using a crock pot and letting it cook all day by itself is the whole idea of an easy vegetarian chili. The best vegetarian chili is when it does all the cooking by itself right? That's the whole point.
Throw all the ingredients in a pot and walk away. Dinner is served when you come home.
