Purple potatoes are just so pretty. They're like regular tubers in stealth mode. Cut them open to reveal a beautiful color. So, let's make a beautiful purple soup!

Creamy vegetarian Purple Potato SoupThis is an ever easy potato soup recipe using purple potatoes. It's vegan and vegetarian friendly but you can bet that the carnivores and omnivores will love them too!

Have you ever tried cooking purple potatoes? Gosh, they're delicious as is.

When I see these beauties, my thoughts immediately switches to making me some hot and creamy purple vegetarian potato soup!

When peeled, these potatoes are just too pretty to cook. Just like any other type of sweet potatoes, this type is great for making potato salad as well. So yeah, grab a pot and let's make the soup!

Popularity doesn't make anyone all pretty. The potatoes that we know of are the red, the white and yeah, that's about it. Well, meet the unpopular purple potatoes. They're not always on the spotlight but they take the spot in my shopping cart when they show up in a supermarket near me.

Here's a super simple vegetarian purple potato soup recipe:

  • 4 good size purple potatoes (they come in white skin and red skin)
  • Almond Milk (eyeball it) add water if you don't have enough.
  • Garlic (quantity to your liking)
  • Salt and Pepper
  • Green onion to decorate it with or anything you like.

Go to your supermarket and find them. Just because they're unpopular, they might be hiding somewhere in a secluded part of your grocer's section like the Asian area or ethnic isle.

If you have access to an Asian market, it's almost a guarantee that you will find these beautiful potatoes there.

Peel them and cut them in pieces then put them in a pot with just enough water to cover them.  Put some cloves of garlic in the pot. How much garlic you say? Well, it's up to your preference. I love my garlic!

Boil them with just enough water to cover them, then let them cook until they're soft. Once these taters are soft, remove the pot from heat but DO NOT DRAIN.  

Mash them right on the pot using a hand blender and blend until creamy. Add a cup of any nut milk you like. You can use almond milk or soy milk. Whirl it a bit more with the hand blender

Pour some in pretty bowl. ENJOY.

It's creamy, garlicky and just have the right amount of sweetness. This is a truly simple, quick and nutritious easy potato soup recipe. This is done in a less than 30 minutes flat.
