Easy Pineapple Fried Rice Recipe

If you like your fried rice fruity, then you have got to try this real easy pineapple fried rice recipe!

Here's an easy pineapple fried rice recipe if you want your rice exotic tasting with fruit and coconut flavor. You can't beat this combination of carbs and fiber. It's so summery yet perfect for any day of the year.

Fried steamed rice with fresh pineapple chunks served right on the pineapple shell. This dish is super fruity. You get the carbs and the fiber too!

Fried rice are actually steamed rice that are recooked again with other ingredients. Stir frying allows all the flavors to come together perfectly according to your taste buds.

Frying rice isn't just a Chinese thing. Filipinos make fried rice often and it's usually eaten for breakfast along with other food such as longanisa a.k.a. chorizo or sausages.

But we are going to make our fried rice vegetarian. You can skip the eggs if you are vegan.

  • chunks of half fresh pineapple
  • 2 - 3 cups of steamed rice
  • 2 tablespoons of coconut oil or enough to coat the bottom of the wok.
  • 2 cloves chopped garlic
  • 1 egg (skip the egg if you are vegan)
  • soy sauce or himalayan sea salt to taste (whichever you prefer)
  • Cracked pepper to taste
  • diced green onion (optional) or you can also use some bean sprouts.

Peel the pineapple, remove the tough center core. Chop half of the pineapple flesh in chunks and set aside.

Beat the eggs in a bowl and set aside.

In a large wok with lots of wiggle room, put some coconut oil in and tilt it a bit so it coats the wok. Fry the beaten egg in it until it solidifies. When done take the egg out and set aside breaking the cooked eggs in pieces with a fork.

Add another tablespoon of oil to the wok and fry the chopped garlic. Fry for about a minute then add the cooked steam rice. Keep stirring just so the rice don't stick if not using a non-stick wok. 

Add the fried egg, the pineapple chunks, salt and pepper or soy sauce to taste. Keep stirring until all the ingredients are incorporated.  

Remove from heat and scoop some in a pretty plate and enjoy. It's really an easy pineapple fried rice recipe. Try it and make your own version.

Nice and fruity. The combination of rice and pineapple gives the dish an exotic flavor. 

In the Philippines, fried rice is usually a breakfast meal eaten with other food and a beverage of choice such as coffee, tea or hot cocoa.
