Vegetarian Dinner Recipes 

Just because you had French fries doesn't mean you meet your vegetable requirement for the day. Vegetarian dinner recipes like potatoes and peppers is an affordable 'one dish' meal.

Potatoes and peppers are a perfect pair that makes a delicious and nutritious vegetarian meal costing you just mere pennies.

Simple meals are always better for the body. The less process and less complicated the food is, the better it is.

Potatoes and Peppers
  • 4 Yukon Gold potatoes (boiled but not mushy)
  • 4 Red Bell Peppers (sliced lengthwise)
  • package of mushrooms (you can use any kind of mushrooms in this recipe)
  • 2 tbp fermented beans (replacement for anchovies)

Note: You can use anchovies if you are a pescetarian, otherwise you can use the fermented beans. Beans are loaded with protein and they're totally vegan.

  • Garlic (6 cloves)
  • Onion (any kind)
  • a bit of olive oil (if using anchovies, use the oil in it to give more flavor)

Peel the potatoes and cut them in quarters. Boil until soft but not mushy. Rinse with cold water and set aside.

In a Saute Pan saute the garlic and onion in the oil until soft but not burnt.

Then add in the fermented soybeans. Add the sliced red bell peppers and mushrooms. Saute until the peppers are tender. Season with salt and black pepper. 

Add in the boiled potatoes last and stir with the peppers along with the other ingredients until all the flavors are mixed together.

Remove from heat and transfer to a Pretty Dish.

If using anchovies, lay a few of them out on top of this dish and serve.
