Vegetarian Desserts - Easy Raw Energy Bars!

There are vegetarian desserts that can be made with just simple minimal ingredients and no cooking required. These healthy energy snack bars are so easy to make.

Perfect for a raw food vegan diet. Just grind, assemble and devour. You can even lick the bowl.

Raw Vegan DessertsThis raw food vegan dessert is guaranteed to make you go weak in the knees. It will not make feel an ounce of guilt even if you devour everything!

Stash these in your lunch box and leave some at home for the kids to snack on after school. Power up with energy with healthy vegetarian desserts for all your snacking. 

This healthy dessert recipe will allow you to lick the bowl without being afraid of salmonella poisoning or anything. This will get munching on the nuts and the dates but resist the temptation. You are gonna need your ingredients.

Warning: Resist the temptation of eating all the nuts and the dates. Leave enough for the recipe!

Let's get to the lowdown on this and start un-cooking using a Food Processor.
  • 1 1/2 Raw Almonds (add some peanuts for a peanut'y' taste)
  • 1 doz medjool Dates pits removed
  • a few tablespoon of raw honey (or Agave, maple syrup will do) though, the dates are sweet enough.
  • 2 tablespoon raw cacao powder for that chocolate flavor
  • 1 tablespoon ground cinnamon
  • 1 teaspoon Vanilla Extract
  • a pinch of sea salt

Note: you can also use the roasted cashew nuts for crunch but then that wouldn't be considered as raw. But what the heck, you're the cook! Use whatever pleases your palate.

Grind the nuts coarsely in the Food Processor.

Set aside a portion that's good enough for sprinkles on top when it's all done.

Add the pitted dates to the ground nuts and continue grinding. It should form into a really sticky ball.

Add the sweeteners of your choice and the vanilla. Work on it until everything is mixed in. 

After everything is mixed in, spread the mixture into a baking pan evenly. Dust with the ground nuts you reserved.

You can cut it into bars right away or you can put the pan in the fridge to firm up a bit.

You might want to use a bigger food processor or you can make 2 batches. This raw food dessert will disappear in no time! That's a guarantee!

Instant raw energy bars! Chocolate'y', nutty, ooey, gooey and it's really delicious. They get even better the next day as the bars dry up a little bit and all the flavors infuse together.

It's a healthy snack you can tote along in your lunch box for work as your power bars or keep at home for that mid afternoon, morning or late night craving.
