Vegetarian vegan burritos are a perfect meal in a hurry. Not to forget, they can be great for lunches too!

Can't seem to get enough burritos these days. No, not the burritos you get from drive-thru windows. We're talking about a healthy vegetarian burrito done in a hurry with big flavor!

Burritos consist of flour tortilla rolled around a filling, typically of beans or ground or shredded beef. But that's the old burrito. Stay with the new.

The new burrito just showed up and it's vegan! So move over old one!

These vegetarian vegan burritos were cooked in a Nonstick Omelette Fry Pan. We love this because it doubles as a wok. The crumbled Tofu was sauteed in it, rinsed it and used it again as a griddle to fry the burritos.

This healthy vegetarian vegan burrito is not your ordinary one. It's delicious and almost fat-free. It's definitely cholesterol-free and it's kind on your waistline.

For the Vegetarian Vegan Burrito Recipe:

  • (Believe it or not) TOFU
  • Onions
  • Garlic
  • Red and green peppers diced
  • Salsa
  • Salt & pepper to taste
  • Turmeric
  • Flour Tortillas
In a nice standard Wok or fry pan, saute the garlic and onion in a bit of oil until soft but not burnt.

Add the diced bell peppers. Stir for a couple of minutes until crisp tender. Add in the crumbled extra firm Tofu. Sprinkle with turmeric powder. Add in some salsa and stir. Season with salt and pepper. Put hot sauce for heat if you wish. 

Steam or heat the flour tortilla so that they're pliable and easy to roll. Scoop a couple of spoonfuls of the mixture on the tortilla and roll to secure or wrap the filling.

Once wrapped, lightly roast the rolls in a heated cast iron pan turning frequently to lightly brown the outside. This helps the tortilla to wrap the filling firmly in place. 

Serve with more salsa on the side. For a really healthy meal, serve with fresh squeezed green juice or other fresh juice and beverage. 

This vegan burrito is nice and filling. I made six of them. We ate some for breakfast and tote the rest for the boat ride. We ate them on the bay side.
