Best Ever Roasted Pumpkin Seeds Recipe

This amazing roasted pumpkin seeds recipe is for the nuts and seeds lovers. When you have pumpkin overload, feel free to share some extra seeds to the critters but save some to satisfy that pesky critter-like appetite in you!

Roasted Fresh Pumpkin Seeds from scratch right out of a giant pumpkin. This stuff is crunchy with just the right amount of saltiness.

Nibble on these roasted squash seeds, even the squirrels will envy you. This stuff is salty, crunchy and addictive. You won't be able to stop snacking on them until they're all gone.

So, you can either throw your pumpkin seeds to the birds and critters to feast on or you can keep them for yourself and make the best ever roasted pumpkin seeds.

Roasting these seeds is super duper easy, you will want to make them over and over again. Yes, it's that good.

Pumpkin seeds also known as 'pepitas' have amazing health benefits:

  • They provide the good fats
  • Lower Cholesterol
  • They have protein.
  • Good for prostate health
  • Reduce inflammation in arthritis
  • Got lots of minerals 
  • Provide loads of fiber
  • and are known to kill parasites in the body. 
To make life easier, use a Non-Stick Cookie Sheet. Those are so much easier to use. A regular cookie sheet was used here, but that's real life. Improvise and use nonstick.
Super fresh pumpkin seeds roasting and filling up the kitchen with that amazing smell of roasted fresh pumpkin seeds.
So prepare those Non-Stick Cookie Sheets and get it ready. No need for oiling as it is nonstick.
  • Fresh pumpkin seeds with some stringy webbing
  • Sea salt or garlic salt
  • Chili powder to make it a bit spicy (optional)
  • Coconut oil preferred but you can use butter 

Carve the pumpkin like you normally would. Reserve the seeds. Don't worry about cleaning out all the stringy webbing from the seeds. That will just give your roasted seeds more flavor.

Season them with either seas salt or garlic salt. If you don't have garlic salt, just plain ordinary salt and garlic powder will do.

If you want a little heat, use a pinch of chili powder otherwise garlic and salt are fine.

Coat the seeds with coconut oil or melted butter.

Spread the them evenly on a Non-Stick Cookie Sheet.

Preheat the oven to 350 degrees.

Stick the pan in the pre-heated oven. Eyeball it. When the seeds turn brownish, give it a stir and re-spread it again evenly in the pan. 

Back to the oven it goes. Bake until golden and crispy. Usually, it takes about 35 to 45 minutes to roast them.

Put them in a Pretty Pumpkin Bowl and dig in.

They're always addicting! A bowl of these roasted pumpkin seeds didn't last long. 

It's no wonder the critters love pumpkin seeds too!

You can also roast butternut squash seeds or acorn squash seeds with this very same method. Another favorite is the 'kalabasa' squash which is similar to pumpkin only smaller but have the same texture.
