Caesar Salad Recipes and Vegan Dressing

A big bowl of salad is on the menu. Caesar salad recipes are easy to make. Complete it with a vegan salad dressing!

Caesar salad meal with a different twist served with homemade vegetarian stromboli. This dish makes a complete meal.

Caesar salads have many different twists and variations. Usually, romaine lettuce is used for the greens. But spinach and other dark leafy greens are used as well.

The darker the green the veggies, the better. Green vegetables are rich in chlorophyll and so much better than Boston Lettuce.

But the secret is in the dressing!

But what good are your caesar salad without the caesar salad dressing?  

Vegan Caesar salad dressing made with raw cashew nuts.

You've got to make this vegan caesar salad dressing yourself. Yes, it's vegan and it's so much better than the dressings that come in jars and bottles.

Raw Vegan Caesar Salad Dressing Recipe

  • 1 cup Raw Cashew nuts soaked in water
  • 1 knob Roasted Garlic (wrap a whole knob in aluminum foil and roast for a few minutes until the cloves are easy to peel)
  • a teaspoon of Dijon Mustard
  • Salt and Pepper to taste
  • Juice of 1 lemon or you can use 1 tablespoon of apple cider vinegar as well - your choice. You 
  • some water to get the blender started.

Note: For non-vegans, you can add anchovies and some parmesan cheese to the mix. This is the vegan version and it's just as good for all your caesar salads.

Put all the ingredients together in a High Speed Blender like the Blendtec. Blendtec is very powerful.

Blend until smooth. Usually, using the pulse feature gets it done, real fast! The consistency depends on how much water you put in the blender to get it started.

Pour it in a nice and Pretty Salad Dressing Container.

Serve with your favorite greenest salads.

It's a one dish meal. It's very, very filling. Eaten with a vegan stromboli or Italian bread, your stomach won't have room for anything else!
