Caesar Salad Dressing Recipe - Making it Vegan!

Dress up your caesar salad with this salad dressing recipe using only nuts and wholesome ingredients. 

This is an updated caesar dressing recipe using raw cashews and plain natural ingredients to make it taste even better than the ones sold in bottles.

Have your greens mainstay however you like it. It may come in the form of a green smoothie or a green juice. Most of the times, for healthy lunches I love my Caesar salads, no doubt my favorite green salad.

When it comes to salad dressing recipes, I like to make mine low fat and only made with real food like nuts with no other hard to find weird stuff.

In this recipe, we use cashews for the creaminess. No eggs, no other weird ingredients you cannot pronounce. It's cashews! Easy enough.

  • half a cup of raw cashews 
  • juice of half a lemon
  • 1 teaspoon of dijon mustard
  • 2 cloves garlic - or a pinch of garlic powder
  • salt and pepper to taste

Soak the raw cashews for a few hours (overnight is best).

Your blender is great for making healthy salad dressings.

Drain some of the water and put them in the high speed blender. When draining the water, just eyeball the amount of liquid so that the smoothness and fluidity of the sauce is to your liking. If it too thick, you can always add more water.

Add the lemon juice, the dijon mustard, garlic, salt and pepper. Process it. Should be done instantly.

This caesar dressing recipe makes a creamy substitute for a vegan mayo. You know, those things are not only pricey but they're loaded with preservatives. How else would they make the shelf life last longer? 

We bring sandwiches and caesar salads on the boat in the summer. We make this caesar salad dressing quite often. We spread it on sandwiches in place of mayonnaise.

When used in sandwiches, it gives a better creamy texture with a garlicky taste. For garlic lovers, this is perfect for all your vegan salad recipes. 

Besides, what's a caesar salad without a vegan caesar salad dressing? Forget the mayo that's a total cholesterol bomb.
