Cole Slaw made with purple cabbagePurple Cabbage Salad Recipes are colorful and so perfect as a side dish. It can be dressed with your favorite dressing and mixed with some fruits of your choice including pieces of tart apples.

Somehow, purple cabbages are much sweeter than the regular green ones. But either one, they're both delicious and nutritious made into coleslaw drenched with your favorite creamy dressing.

With this beautiful purple cabbage salad, it's both pleasing to the eyes and the palate!

We used to make this mayonnaise based until this vegan salad dressing was discovered and perfected using raw cashew nuts. You can make all the variations of dressings to make your cabbage salad recipes the best on the planet.

  • Home grown purple cabbage
  • Fresh Pineapple Chunks
  • Optional raisins or other dried fruits
  • salt and pepper to taste

Purple cabbage salad from the garden. It has vegan raw cashew homemade salad dressing.

If possible, organic cabbage from the garden is preferred. Though, the regular varieties will do.

Peel the tough outer parts of the cabbage. 

You can use your manual cheese grater or make it quick and easy using the grater blade of a food processor. 

The food processor makes the process quick and easy.

Shred them into nice thin shreds. Note that the cabbage shrinks in size when shredded and put in the fridge for a couple of hours with the dressing so use the entire cabbage and put them in a large mixing bowl.

Core and prepare the pineapple and cut them in chunks. Don't throw out the pineapple cores because they're very good for juicing

Mix the chunks with the cabbage. Add some other fruits like grapes or raisins if you want.

Put your favorite coleslaw dressing either store-bought or made by yourself from scratch. We used this: Caesar salad dressing without the mayo - this stuff don't spoil outdoors like the mayo so your salad is safe for picnics!

Season with salt and pepper to your liking. 

Note: For an even beautiful color, mix in some shredded carrots at well so you have a combination of orange and purple!

Make it and spike up your barbecue with this tasty colorful salad.

We stuffed some pita pockets and made simple vegetarian lunches eaten with just a few olives! It's a step up from the ever simple green tossed salad recipes we did which were also excellent. 

Salads are the best way to help detoxify the body. With quick vegetarian meals like this, how can you go wrong? The preparation is so simple and it won't put a dent on your wallet. Vegetables like cabbages are ounce for ounce the cheapest and are easily available at your supermarket or vegetable stand year round.
