Actually, the best potato salad recipe is the one that you want to make over and over again because you want to. It's something that's a breeze to make and uses simple ingredients. This spud's for ya':

A potato salad is basically boiled potatoes with some chopped vegetables and herbs mixed in with some dressing of your choice, right? 

Well, this potato salad calls for fresh potatoes. We used the ones dug from the organic garden, boiled to perfection and not mushy.

Potato salads are always better than good when you made them yourself and you know what you put in them.

Easy Potato Salad Recipe:

In this dish we used the red skinned garden potatoes and they're peeled. You can use any type you want but we prefer the red ones because they're just great for salads, okay?

  • Red Potatoes
  • Red Onions (to make it pretty)
  • Garlic cloves crushed
  • Red bell peppers chopped or diced (sliced into rings to top the salad)
  • regular or vegan mayonnaise or your favorite dressing (this one has the oil and vinegar home-made dressing.)
  • herbs of your choice (chopped parsley or basil)
  • Chopped organic boiled eggs 
  • Chopped small pickles
  • Chopped green olives

Boil the potatoes with the skin on and throw in a couple of eggs and boil them together. Check the potatoes while boiling them, just so the they're soft enough when you 'fork it' - we mean, testing them with a fork (forking it). Don't over boil. 

Once they are cooked, take them out of the water and let cool. (You can boil the eggs too with the potatoes to save time and that's one less pot to wash after). When cooled, the peel should slide off of them using your fingers.

Break them apart with your hands in a deep salad bowl.  Set aside and assemble the dressing with chopped herbs, 2 stalks of celery, chopped onion, garlic, olives and pickles. Mix them up and pour over the boiled broken up potatoes and mix it.

Chop the hard-boiled eggs and mix them in until everything is incorporated nicely. 

Do a taste test. Season with salt and pepper to taste.

Serve in a salad dish and sprinkle with diced red peppers and herbs if you want. Red bell peppers makes a petty decoration adding a little crunch to the salad.

This is very tasty and makes a great side dish for any meal. It beats the supermarket bought potato salad that's been on display for who knows how long they've been there.

This will definitely pass for the best potato salad recipe made at home using just one pot and a few ingredients. This is great for picnics too! Yes, it won't spoil fast as there's no mayo.
